It's unclear how many version-exclusive Gyms there will be in total, but the latest trailer showcases at least one of them.
Some of the gym leaders in Pokemon Sword and Shield will only be available in one of the two versions. And wouldn't you know it: after learning about Dynamaxing and how it'll make Pokemon huge and powerful, "it's been discovered that there's a special phenomenon known as Gigantamaxing". Every time we make a new game we want to change up the formula and do new things but if you do too much all at once then it feels like it might not be a Pokémon game.
